Welcome Dips Platter

Fresh Pesto—Basil or Coriander, chilli and lime

Fresh Tapenade—Black with sun-dried tomato or spicy green and black

Creamy Mojo—hot red or cool green

Tortilla Chips, freshly baked ciabatta, homemade melba toasts

Menu 1—Please choose two dishes

Cajun Chicken—Irish fillet of chicken coated in Cajun spices , pan seared, oven baked, served with crème  fraiche.

Fusion Chicken—Irish fillet of chicken marinated in an east-west pesto with ginger, garlic, chilli, lime, coriander, basil and mint, pan seared and oven baked

Moussaka—the classic Greek dish, minced lamb cooked with tomatoes, onions, garlic, red wine and oregano, layered with roasted aubergines and sliced potato, topped with a creamy cheese sauce.

Beef Lasagne—minced beef cooked with onions, garlic, tomatoes and fresh herbs, layered with pasta and topped with a creamy cheese sauce.

Menu 2—Please choose one type of chicken and one type of fish

Nut Crusted Salmon—fillet of salmon coated in pistachio nuts oven baked and topped with ginger, coriander and lime butter.

Cajun Salmon--- fillet of salmon coated in Cajun spices and oven baked, served with minted cucumber yogurt.

Agean Style Hake—fillet of hake roasted with olive, tomatoes, basil and garlic with olive oil and lemon.

Cajun Chicken—fillet of Irish chicken coated in Cajun spices , pan seared, oven baked and served with crème fraiche.

Fusion Chicken--fillet of  Irish chicken marinated in an east-west pesto with ginger, garlic, chilli, lime, coriander, basil and mint, pan seared and oven baked.

Vegetarian options— 

Cajun Cakes—chick peas mixed with sautéed leeks, onions and mushrooms seasoned with Cajun spices , coated in wholewheat breadcrumbs, pan seared and oven baked.

Aubergine Cannelloni—char-grilled aubergine slices, rolled around sliced mozzarella, pesto and parmesan, topped with chunky tomato sauce.

Roasted Vegetable Moussaka—a mix of roasted peppers, courgettes, mushrooms and tomato layered with roasted aubergine and sliced potato topped with goat’s cheese.

Both menus come with your choice of three salads from the following—

Pineapple and Mango Salsa—fresh pineapple and mango with red onion, red chilli, coriander and lime.

Tossed Mixed Salad Leaves with Irish Garden Dressing.

Baby Potatoes in a Watercress and Balsamic Dressing, or a lemon, basil, chilli, garlic and olive oil dressing, latter may be served hot.

Carrot and Cheese with Spring onion.

Coleslaw.

Herb Fusion Rice—basmati rice with ginger, garlic, coriander, spring onion and sun-dried tomatoes, this may be served hot.

Penne Pasta with basil pesto, asparagus, sugar snap peas, diced mixed peppers and cherry tomatoes. 

Tabbouleh—bulghar wheat mixed with diced tomatoes, cucumber, spring onions, mint and parsley in a garlic and lemon olive oil dressing.

Carrot and Apple—grated carrots and apples with apricots and toasted seeds in a lemon and coriander dressing.

Rates quoted on request and will be based on number of guests, menu choices/mix and what level of serving, if any, is required.
